The Easiest High Protein Macro Friendly Meal

Sometimes I think we tend to over complicate things in the kitchen when the reality is…..we mustn't overthink it.  You know my mantra, if it has too many damn ingredients, I ain’t cooking it.   Also…Leftovers are L I F E.  With those two thoughts  in mind, let me introduce you to THE EASIEST, TASTIEST, PROTEIN PACKED meal that I have been eating on major repeat as of late.  It takes 10-15 mins to make, is just as good leftover, and dare I say will definitely get you one step closer to that protein goal.   This is just one of the many tasty dishes I eat while tracking my macros on the FASTer Way–I swear I think my clients are most surprised by the sheer amount of (tasty) food we eat while on the FASTer way—-this savory dish is no exception! 

• rinse your sweet tater and rub with avocado oil and poke holes (I find the oil keeps it from drying out)

• microwave for 10 mins 

WHILE IT COOKS, prep your meat sauce 

• saute garlic 

• brown ground beef (I do 2lbs so I have leftovers) 

• I heavily season with salt, pepper, Italian seasoning, and red pepper flakes for a kick

• drain beef and return to pot and add 

• 1 can of (organic) tomato sauce and another 1/2 can of diced/crushed tomatoes (I like petite) 

• repeat seasoning 

• let simmer while tater finishes up

• squeeze the tater onto plate so it’s almost a mash consistency (you can also just load up your sweet tater if you like the skin (I don’t 😉) 

• top with sauce and ENJOY!!! (You can add fresh parm too if you’re a Dairy Queen 👑 🧀)

OTHER Tater Topper IDEAS: 

Loaded TACO sweet potato (same idea just do taco seasoning and fixins)

Tuna salad Tater (trust me)

Chicken SALAD tater (need y’all to trust me)
