This chicken piccata recipe of my fam’s faves. I suspect it might become one of yours too... Just as easy as it is delicious!
Ingredients for your Gluten Free Chicken Piccata Recipe:
Boneless, skinless chicken breasts or tenderloins
Italian seasoned panko breadcrumbs
Parmesan cheese, finely grated
Everything bagel seasoning
Salt and pepper
Avocado oil
1 tablespoon butter
½ cup chicken broth
¼ cup white wine
Lemon
Capers
Pasta, for serving —preferably gluten free
Make chicken breading by combining healthy palm full of Italian panko, parm, and a good dash of bagel seasoning. Season chicken with salt and pepper and coat both sides with the breading mixture. Heat avocado oil in a large skillet over medium-high heat. Add chicken and cook 4-5 minutes on each side, until cooked through. Transfer chicken to a plate. In the same skillet, add butter, chicken broth, white wine, juice of half a lemon, and capers. Bring sauce to boil, scraping up the brown bits on the bottom of the pan for all the extra-yummy flavor. Turn heat down and simmer until slightly reduced. Transfer the chicken back to the sauce and turn to coat. If you’re low-carbing this, serve chicken with All Day Everyday Arugula and roasted broccoli. If you’ve got carbs to spare, serve with gluten free pasta. This one is a crowd-pleaser with the entire Chappo crew.
